For 20 drinks, the difference is 15 grams multiplied by 20: 300 grams more prepared pearls than the written recipe calls for. This is a prepared-weight comparison, not a calculation of raw pearl cost or cooking yield.
The owner checks the draining method, serving utensil, and staff instructions together. A scale is used to compare the actual portion with the recipe, and the team practices the agreed method.
The owner also checks whether extra-topping orders are being recorded correctly. Higher usage is not necessarily a mistake if customers deliberately ordered and received a different portion.
A useful follow-up would compare portions across shifts and reconcile prepared batches, sales, extras, and remaining stock. The same drainage method should be used when comparing weights.
